I went to Caprock Canyons State Park in the remote plains of the Texas Panhandle during COVID-19. Stunning red rocks & hiking alongside wild bison herds. $300/month campsite with water/power with steady 3G cell service. Went days without coming within 20 feet of another person, loved it.
